Chipotle Sweet Potato Turkey Chili

One of my biggest pet peeves is browsing online recipes and being forced to scroll through someone’s entire life story before I finally reach the ingredients and preparation so I will be brief. Tonight I didn’t want to leave the house in search of dinner so I took a mental tally of the assorted leftovers and supplies in my kitchen and this is what I came up with. It’s honest to god, the best chili I’ve ever made. Enjoy!

Ingredients:

2 Tbsp olive oil

1/2 medium onion, diced

1/2 green bell pepper, diced

3 garlic cloves, minced

2 large chipotle chili peppers in adobo, finely diced, plus 1-2 Tbsp of adobo sauce from can, depending on how spicy you like

1 lb 93/7 ground turkey

1 1/2 Tbsp kosher salt

1 Tbsp ground black pepper

2 Tbsp chili powder

1 1/2 Tbsp ground cumin

1 Tbsp paprika

1 medium sweet potato, peeled and diced

1 can diced chili ready tomatoes

1 can dark red kidney beans

1 can chili beans

1/4 – 1/2 can each, black beans and yellow whole kernel corn

Preparation:

Heat oil in large pot over medium heat

Add onions garlic and green bell pepper, stirring and cooking 3-4 mins

Add chili’s and adobo sauce, coating veggies in pot

Add turkey and spices, stirring to combine all ingredients

Cook until turkey is done, stirring occasionally

Add remaining ingredients, increase heat to high, bring to a boil, then reduce heat and simmer 20-30 mins until sweet potato is tender

Garnish bowl of chili with a dollop of sour cream
