Farm Fresh Eggs, Red Lips and Everything In-Between–an update

I have admittedly been slacking on my blogging lately and there’s no excuse.  Although I will say I have been working my sweet southern butt off since my little Valentine’s getaway.  Guess that’s the price you pay for time off.  I had the busiest weekend of my life at work last Thursday through Sunday.  Thursday we had a DJ come in for a “dance night” promotion, which isn’t my thing, but if it brings in the kids and they want to give me their money, I’ll play along.  Ashton and I went all out in J. Valentine inspired go-go gear and it worked to our advantage.  I made more money that night than I’ve ever made in one night in my entire work history.  The next night, Friday, was another huge night at work.  We pulled epic numbers yet again.  Then I worked a 13 hour double on Saturday, followed by a 2 hour intensive cleaning party on Sunday, an alleged day off.  Work, work, on Monday and Tuesday, and that brings us up to speed with my “weekend” Wednesday and today.  On top of this crazy work schedule, I have taken on the added responsibility of working on our annual fundraiser for the Humane Society, The Mr.Tipton Street Pageant.   Phew!

I managed to squeeze in a few fashion and makeup hits over the past few weeks however.  One of my favorite looks was surprisingly on Valentine’s Day when I actually rocked a red lip in public. I’ve only worn red lips in public on 3 occasions as I am of the opinion that red lips are a privilege, not a right, but perhaps, I’m wrong.  Perhaps everyone can wear a red lip.  If I can do it with my giant mouth and manage not to look like The Joker anyone can!  I opted for M.A.C.’s “Brave Red” lipstick, over their “Brick” lipliner, with a blob of sheer red gloss right in the center of my lips that I honestly do not remember the name of, only that it is M.A.C.  Paired with romantic Veronica Lake waves and a lace neck, peplum blouse, I felt like a real Cupid.

I also pulled out some shorts last week, as temperatures shot up to almost 70 following our 2-day blizzard.  These silky khaki Express shorts were just perfect with a billowy CK blouse in rose.  Add gold accessories and gold Guess ballet flats and I’m ready for spring.

katI treated myself to a mani/pedi today and finally got my mitts on some matte black gel polish.  I’ve been wanting this manicure for quite some time.  It will probably be my last black manicure until fall, as I’m ready for some fun spring colors.  I saw at the salon today that OPI has a really fun Brazil inspired line out for spring that with a coral that I’m dying to try.  Unfortunately, I didn’t take into consideration that I will be at the beach in less than two weeks for Mitch’s spring break and black isn’t very beachy, but c’est la vie.

I would say that the highlight of my week was paying a visit to Clover Creek Farms to pick up eggs.  This place, also known as Green Eggs and Lamb, was amazing.  I didn’t want to leave!  Clover Creek Farms plays home to a flock of over 200 lambs, dogs, several horses, guineas and of course, chickens.  The chickens are Animal Welfare Approved, which means they have free range of the farm, foraging for bugs and other food in nature, just as they were intended.  Their diet determines the appearance of the eggs, thus giving them their wide array of shapes, sizes and gorgeous colors. They’re almost too beautiful to eat!  The yolks are enormous and a beautiful deep orange.  The lady of the farm was also kind enough to throw in a pound of long horn beef , which I made into hamburger steaks.  It was delicious.  I added a little olive oil at her suggestion, as that type of beef is so lean it can tend to dry up.  I’m so excited to be eating things that come from just down the street as opposed to a grocery store.  The difference in taste and how I feel is more than evident.

I hope to have more time to blog this week, especially while we’re away on spring break.  We’re headed back to Myrtle Beach to stay with one of my best friends Christian.  I spend a lot of time in MB during the summer months, but this will only be Mitch’s 2nd trip there with me.  Pray for him 🙂 On that note, I would also like to say that I have been watching “Myrtle Manor” and “Party Down South” which are both filmed in Myrtle Beach, and it truly is a shame that these shows are representing that area.  If you get off the strip you can experience a whole new Horry County and it is not the trash box those shows make it out to be.  In parting, I leave you with this adorable picture I snapped of Mitch and one of my sweet babies Mr.Mouse.  I’m one lucky gal.  Til next time!

Valentine’s Day, my way….

So as promised, I’m writing today to recap this weekend’s wonderful events.  Because Mitch and I work together (which by the way, I do not suggest for anyone else.) I decided it would be easiest for us to celebrate a week early, so it wouldn’t be so hard for us to get time off with everyone else wanting to celebrate as well.  I wanted to do something extra special for my love, so I planned a surprise overnight stay in Knoxville for Saturday.  After waking up and getting on the road by 11:30am, we arrived at The Oliver Hotel, a beautiful boutique hotel in the heart of the Market Square District by 1:30.  I had called ahead of time and arranged for an early check-in, which the receptionists were more than happy to accommodate.  Also, because of an online promotion I had participated in, we were upgraded to a king suite from a queen at no cost.  Our room was beautiful.  Simple, modern and classic design set in a vintage building.  Shutter style windows directly overlooked Market Square and the bathroom was equipped with a large walk-in shower, subway tile and modern hardware on all the faucets.

We grabbed a quick nibble to tide us over until dinner at Trio Cafe, which was right around the corner from the hotel.  Mitch opted for a turkey panini and Angry Orchard Cider, while I had a very grown up grilled cheese and tomato soup paired with a rich chocolate porter.

After lunch, Mitch relaxed with a nap while I spent the next two hours getting ready.  (Typical.)  Before I left I found the most perfect red and black rose print DKNY skinny jeans for $6.99 at Ross.  I’m obsessed.  I matched them with a simple black tank and blazer and my favorite black studded motorcycle boots.  Smokey eyes and a nude lip finished the look.  My gorgeous boyfriend was my best accessory, wearing classic dark jeans from the Gap and a simple black sweater.

Mitch had never been to Ye Olde Steakhouse before and I knew he would just love it, due to the 20oz steaks and casual atmosphere, so off we went for dinner.  Everything was delicious, as usual. My filet was so tender, I could have eaten it even if I was toothless.  Also, since it is BYOB, I splurged on a good bottle of wine I’ve been eyeing for about a  month.  I have a personal policy to not spend more than $15 on anything that is going to be passing through my body, however, “the prisoner” was an excellent choice.  At $45/bottle it better be!

After filling up on dinner, wine and dessert, we went back and enjoyed the beautiful hotel room and let our food settle.  Finally, we decided to venture out and explore Market Square.  A quick stop at the Peter Kern Library, the speakeasy adjacent to our hotel was first on the list, with Preservation pub being our final watering hole.  we really enjoyed the live music, beer selection and atmosphere.

As wonderful as our trip out of town was, I have to say my favorite part of the weekend was yesterday, Sunday, when we got to just lay around the house and be lazy together.  It is a very rare day that I get to be home and not have to do dishes, laundry, bathe the dogs, etc.  So it was just me and Mitch enjoying the quiet comforts of home.  I made an awesome chicken dish in the crockpot that was too simple and delicious not to pass on.  I’ll post it below.

I hope everyone has as great a Valentine’s Day as I did next weekend.  For now, it’s back to the grind.

Introduction

Six ingredients, 5 minutes of hands-on cooking, and dinner is served!

Number of Servings: 6

 

Ingredients

      2 pounds boneless, skinless chicken breasts
      1 packet Italian dressing mix
      1/2 cup water
      1 (8-ounce) package reduced-fat cream cheese
      1 can 98% fat free cream of chicken soup
      3 cups cooked long grain rice (white or brown)

Tips

Just to clarify for the questions below:
First, YES the cream cheese is figured into the totals…if you use FULL FAT cream cheese, the fat content will be considerably higher. But low fat cream cheese really takes the fat down.

Second, I haven’t ever tried it with regular Italian dressing…let me know how it turns out!

Third, I HIGHLY recommend using the low setting for cooking…it allows the juices from the chicken to really seep into the dressing.

 

Directions

*1. Place chicken in crock pot
*2. Mix together Italian dressing mix and water. Pour over chicken.
*3. Cover and cook on high for 4 hours OR low for 8 hours.
*4. Mix together cream cheese and soup in separate bowl.
*5. Carefully remove chicken from crock pot to plate.
*6. Pour cream cheese/soup mixture into crock pot and mix together with dressing in bottom.
*7. Return chicken to crock pot and mix gently to shred the chicken.
*8. Cook on LOW until heated through.
*Serve with rice or noodles.

**You may add skim or low fat milk in very small quantities to thin the sauce a little. It does not significantly affect the nutritional value if you use up to 2 tablespoons**

Makes 6 servings. Approximately 2/3 cup mixture with 1/2 cup rice.

This recipe can be made with FAT FREE cream cheese and it saves about 6 grams of fat. However, I feel that the dish benefits from the flavor of the low fat over the fat free.

 

Transformation Tuesday

Hi y’all!  It’s a beautiful East Tennessee Tuesday, and according to my Instagram feed, it’s also “Transformation Tuesday.”  So keeping with that theme, I would like to reflect on a few personal transformations, starting with the weather this week!

I just have to say that I have got the WORST case of spring fever you ever saw!  Thanks to this crazy, southern winter weather, in the past week we went from -1 temperatures and a snow storm last Tuesday, to a beautiful, sunny 70 degree day by Saturday.  How in the world is  a person supposed to keep up?!

As much as this weather has changed, it has certainly got me ready for beautiful spring days, and got me in the mood to transform this house from winter to spring. Since fall I have kept the “leaves” scented Bath and Body Works wallflowers plugged in throughout the house, but I’m thinking as soon as they run out I’m going to have to switch over to something a little more fresh.  I also reflected my mood with my flower choice this week.  I threw out the beautiful blood red roses Mitch surprised me with last week and replaced them with big pink lilies.  (Side note: I try to keep as many fresh flowers and live plants as possible in my house.  The more life and beauty you surround yourself with the more beautiful your life will be.  Also, live plants add multiple benefits to your living space which you can read more about here.)

I also feel that right now is the best time to address the transformation I’ve noticed in my dogs over the past few weeks.  I think they’re also being affected by the weather and are starting to act out from being stuck in the house so much!  My little chihuahua babies don’t do especially well in really cold weather, so over the past few weeks with temperatures dropping down to single digits and snow covering the ground, they haven’t been as active as they would like and it’s driving them stir crazy! They have started acting out in ways I’ve not seen since they were puppies and they’re 9 now.  This week alone, I have had to call the police and a locksmith because they locked themselves in my running car while I was putting wiper fluid under my hood.  They got into a bag of deer jerky I left on the coffee table and ate the whole thing.  Then drank their entire bowl of water and peed on the couch.  Then I came home from work last night and they had gotten into a trash bag–something they haven’t done since they were babies!  So every opportunity I’ve gotten at weather above 40, I’ve walked their butts off trying to unleash some of this pent up energy!

Finally, I cannot write a transformation post without addressing my own personal transformation.  Over the past year I have changed my life drastically.  I spent 5 years in a dead end relationship with a person who was not good or right for me, worked at a job that I dreaded walking into on a daily basis and was 30 lbs overweight.  My self esteem was at rock bottom.  I felt that this life was all there was and it would never get better.  i was a severe pessimist.  A lot of this had to do with my drinking habits.  I was bored and surrounding myself with people who partied a lot so it just seemed normal to go out 6 nights a week.  I got a DUI.  I had no money.  The person I was with had no concept of love and how to express it and I had some sick attachment only because I was fixated on fixing him.  In March of 2011 I took the first steps by moving out on my own.  I wish I could say that relationship ended completely then, but it did not.  I started partying even more with my newfound freedom, and loosely seeing other people, but I continued to fall back on this person every time I was lonely or bored for the next 2 years.  Strangely enough it always felt more lonely when I was with him than when I was on my own.  After moving out, I lost the extra weight I had been carrying.  I was depressed and just didn’t eat so it wasn’t a healthy weight loss, but at least it got rid of it.  Finally, around March of 2013, I got some self esteem.  I started working out and eating right.  I had an awesome friend base.  I quit the job I hated.  I somehow had came to a point where I had weeded out all the exhausting relationships in my life but the one and it was now time to let that go too.  Once I finally unchained myself from all that negativity and learned to love myself, it was like I had opened myself up to be loved in the kind of relationship I deserved.  It was in May of 2013 that I became involved with Mitch.  He is the great love I’ve always heard about but never thought was true.  In all honestly, this man saved my life.  He truly is my better half.  I have major problems with self control and Mitch is the little angel on my shoulder that steers me in the right direction.  I can’t give him all the credit however.  If I hadn’t pulled myself from negativity and surrounded myself with light and positivity, I never would have been in a position to be loved.  As cliche as it sounds, reading “the secret” really changed my life and I would recommend it to anyone who is feeling lost and hopeless.  The things you put out  really are the things you attract.  You steer your own ship.  As devastated as I would be if something happened and Mitch and I didn’t work out, I now know how to love myself enough to be a stable, happy individual with a purpose.  The way you feel on the inside really is reflected on the outside and these photos prove that beyond a doubt.  I hope this post will help someone who feels lost like I did.  Don’t look for happiness in another person–like fireflies, find the light in yourself first, and that light will attract the person with the right light to match yours.
