Can we just talk about how gorgeous this salad Is that I just threw together on a whim? Leftover pesto chicken from the crock pot tops a bed of spinach, cukes, Roma tomatoes, red pepper slices and a few strategically placed croutons. Drizzled with EVOO and pomegranate red wine vinegar…..YUM!
